All ranged and melee attack speed will be increased by the set effect. Since CRKs can be dual wielded and are fast one-handed weapons, and Fanatic is normal speed, it's more likely you'll do more damage with CRKs (reaches very fast speed level, +crits). You can increase your attack speed even further with pet buffs, for example Alto's attack speed buff upon summon (increases attack speed by 0.3 for 15 seconds).
The knuckles + staff appearance is most likely a glitch. After some time fighting with knuckles and switching to any other weapon (knuckles stay in secondary slot), you might see your fighter weapon appear as gloves. As for the staff, most staves can be dyed with Regular or Fixed Metal Dye Ampoules, cloth dye ampoules for other parts (ex.: handle part for Tribolt).
Renown level cap is 50. Reaching 50 Renown for Nele increases your Crit chance by an additional 7.5% (ignores 30% rule - up to 37.5%) and reaching the cap for Yvona adds up to 10% extra Critical (past 30% rule).
