Collection Journal Help

So I need to collect 15 (5 stars) fish to complete the quest 1 cast, 1 fish. How do you know if a fish is five stars or not? I've had this quest for a long time. When I look at the other fish in my journal so far I do not see a star rating on any of them.

    Something to do with manual fishing as oppose to auto fishing.

    You need to collect at least one of every fish to start seeing the star ratings.

    The 3 I'm missing are Herring, yellowfin tuna and a rano salmon.
    Now I'm having an issue with the collect 200 monsters for your transformation diary. I have 202 monsters collected and it's not giving me the journal points for it.
