Right now it feels like Wine Making is far too limited, with only two cultivars of grapes that make only one wine each. What about white wines made from white grapes?

Examples:

Blago Nouveau (made from Blago Blanc grapes)
Errans Vin (made from Errans Aligoté grapes)

As for other possible ideas...

Rosé Wines:

Blago Loire (made with 10 Blago Noir and 10 Blago Blanc)
Errans Rosada (made with 10 Errans Sauvignon and 10 Errans Aligoté)

Aromatized Wines:

Blago Lillet (made with 17 Blago Blanc and 3 Oranges)
Errans Americano (made with 17 Errans Aligoté and 3 Mana Herbs)

If anyone has their own ideas for wine or grape varieties (white or red), feel free to share them.

Hmm, different wine varieties are all well and good, but wine is also used in cooking in real life. It would be nice if we could use the wine we made for Pencast by him giving a star rating for each wine we age from a new appraisal feature, and then it could be used as an ingredient such as Lezzaro or Eluned Brand Wine. Maybe Cooking could have a sister skill named Barista that specializes in making multiple types of beverages other than the ones we currently have for Cooking. Or, we could use Barista in the next rank of cooking, and involve little mini games for working part time for Annick. Right now Wine Making is far too easy to Master with no actual reason for the skill to exist at the moment, so new wine types and recipes involving player aged wine is crucial.

Actually, there are recipes in the game that use Emain Macha Wine. Still, you're right that there should be more uses for made wines. As for your Barista skill idea, that almost sounds more like something that could be a variation of the Catering skill.

I just wish Wine Making (the function) was more useful.
And, that the Wine Making skill actually affected it.

Or, that the replacement minigame wasn't so difficult.
Or, at leasr that Pencast wasn't so picky.
I haven't done Wine Making (except for ranking the skill), since back when it was still new-ish.

Aging takes too long, trashing your wine is too easy, and the rewards aren't very good or relevant anymore.

Yeah, it's kinda silly that properties like Age and Acidity only affect the quality rating of wines (purity and freshness are a bit more understandable), rather than resulting different varieties altogether. It's as if they're suggesting that younger, sweeter wines are inherently inferior to older, drier wines.

Catering is just for combining dishes, it really hasn't been introduced as anything involving new dishes, recipes, or new methods of cooking. A 'Barista' utilizing player made wine could be placed into Wine Making had it been an active rather than a passive skill. That's why I've temporarily labeled it either as a new cooking rank, or a new skill of it's own.

Or you know; Use it for my cooking ideas with Fermenting.

Mixing can help with general mixed drinks, but overall like I said earlier; MANY things that seem like they should be ingredients cannot be used. Honey, Made Wines, etc.
